Shaved Fennel Salad with Pomegranate & Lime // Autumn Makes & Does

This is my favorite type of salad–one that’s thrown together with whatever is on hand, but ends up being worth replicating again and again. I hadn’t necessarily planned to post another recipe featuring pomegranates just yet, but this past weekend 2 more bags full showed up at our door. If you haven’t been following along on instagram, no short of 4 different people have given me pomegranates in the past couple weeks. My mind is blown! Every single time!

 

Shaved Fennel Salad with Pomegranate & Lime // Autumn Makes & DoesI joked with Paul that the pomegranate situation here is like zucchini everywhere else: everyone seems to have some to pass off on their friends/neighbors. The key difference being that when pomegranates arrive in shopping bags on your doorstep, are offered up for grabs at work, or appear in a bowl in your home when you wake up in the morning as if left by the easter bunny (That ACTUALLY happened! Thank you, Katie!), you rejoice in earnest.

Shaved Fennel Salad with Pomegranate & Lime // Autumn Makes & DoesI’ve been enjoying them fresh as much as possible and have found them to be the perfect tart, crunchy add-in for salads. I realize that the more fall-appropriate preparation for these fennel bulbs would probably be braising or caramelizing, but I greatly prefer their clean, licorice-y taste raw. The often-maligned green peppers really shine here! Sliced thin, their slightly bitter, grassy flavor mellows significantly and is a perfect foil for the pomegranates.

Shaved Fennel Salad with Pomegranate & Lime // Autumn Makes & DoesI dressed this simply with the juice and zest of an organic lime and added plenty of finely minced garlic for savory magic and cold fighting power. There’s no reason summer should get to have all the slaw! This absolutely has make-ahead potential for fall entertaining and holidays, but wait to salt it until you’re about to serve it so things stay nice and crisp.

Shaved Fennel Salad with Pomegranate and Lime

Serves: serves 4-5 as a side
Shaved raw fennel salad with green peppers, pomegranate, and lime.
Ingredients
  • 2 large fennel bulbs, halved, cored, and sliced very thin on a mandoline if you have it
  • 1 large green pepper, seeds removed and sliced very thin on a mandoline if you have it
  • 1 large (preferably organic) lime, zested and juiced
  • 2 bulbs garlic, minced very fine
  • ¾ cup pomegranate arils, about half a small pomegranate
  • salt to taste
Instructions
  1. In a large bowl, use your clean hands or a wooden spoon to toss together the fennel and green pepper.
  2. Add the lime juice, lime zest, and finely minced garlic. Stir to fully incorporate.
  3. Gently incorporate (your hands really are best for this) the pomegranate arils.
  4. If ready to serve, salt to taste and adjust the amount on lime juice if you’d like, depending on your taste.
  5. If prepping this in advance, wait until serving to salt to taste.

yum I”ve been pomegranate and fennel crazy recently, I can’t wait to try this and sprinke some nutritional yeast on top (as I’ve been addicted to that too) YUMMYY!!!
