A couple of weekends ago I got to try some prickly pear pico de gallo. The guys at the little burger stand that was serving it were so darn proud, I think they asked us three or four times how we liked it. It was pretty amazing, so much so that we had a fairly serious debate about the appropriateness of asking for a cup or two for the road. I was too bashful to ask for more, but have been regretting the decision ever since.

So, I had outside the box pico on my mind when I came across this recipe for Apple Pico De Gallo on Yahoo! Food. I was drawn to the recipe because it utilizes ingredients that straddle the seasons in a super-smart way. It has a perfect transitional season combo of  tart green apples, which are some of the first to come into the market in the fall and tomatillos, which bring up the tail end of summer. Although seasonally in sync, the combo is otherwise totally unexpected. Plus, I have a soft spot for recipes that urge you to just “use your hands” as a stirring implement.

The original recipe suggests serving the pico on top of fish or even tossed with greens, but it inspired some formidable vegetarian tacos at my place with lime and chipotle roasted portabello mushrooms, salty cotija cheese, sungold tomatoes, and avocado too. The tart, crunchy Apple Pico De Gallo was the perfect addition, adding just the right amount of acid and heat.

Autumn! This looks amazing. I’m sure the texture and flavor from the diced apple is perfection on tacos.

I really like the way you think. Apple, onion, cilantro, peppers work, with lime of course. I think a little mint also. Cilantro and mint love to be together. Nice job. And I like the way you write.
